By Ashlea Hartz, N.C, RYT

Avocados. If you are from California they might be a staple of green goodness in your diet.
You may know that an avocado is full of healthy monounsaturated fats that not only make them rich and creamy, but also slows digestion helping to stabilize blood sugar after your meal.
But did you know that some considers this fruit (yes it is a berry technically) a superfood due to its disease-fighting antioxidants? Avocados are rich in vitamins, minerals, and fiber which make you feel fuller longer helping many people lose weight.

Avocados are a food that can easily be incorporated into your everyday diet, especially if you are ready to get a little creative. Having a quarter to half an avocado a day can be an excellent boost for your diet. So if you want to move past the guacamole, try these four avocado recipe ideas that are sure to blow your mind.

Now this recipe has become my work lunch favorite! Adding avocado to salad is nothing new, but this Kale Salad from The Earth Diet cookbook actually takes the avocado and massages it into the kale to make a rich and creamy dressing. Messy? Yes. But well worth the sticky fingers.
